El Ocote
For the fifth harvest in a row we buy coffee from the Sagastume family and this time it's from the second of the brothers in the family Yeltsin.
The Sagastume family has been producing coffee for several decades, and this is the fifth year we are buying coffee from the family. This time, it is from the second brother, Yeltsin, who is responsible for the farm El Ocote, where this lot of Parainema has grown.
When the coffee cherries are harvested, they are immediately taken to the family's drying station. The drying process begins on the same day the coffee is harvested. The coffee is dried on raised beds and continuously turned to ensure it dries as evenly as possible. The process takes between 15-22 days to reach the optimal humidity level.

All coffee is packaged as whole beans in 250g bags. Store the coffee in a cool, dark place for maximum freshness.
